Description
An unidentified man, Andrew Peterson and Bainbridge “Uncle Ben” Davis were photographed as they dressed fish on Fish Beach.
After the fish were cleaned at the dressing table, they were rinsed in the large barrels, called “butts”. The fish were then cured with salt and sent to Portland.
Sometimes the fish were “kenched”, heavily salted but uncured, stored in butts and sent to Portland later. Directly behind Andrew Peterson the navigational tripod that stood on Smutty Nose island is visible.
