Description
This style of seed potato cutting bench was widely used on Aroostook County farms. When used by a skilled cutter, hand cutting was faster than many mechanized systems. When cutting potatoes for seed, it was necessary to cut them so that each piece had at least one eye in it. Cutting seed by hand enabled the cutter to make informed decisions on how best cut a potato because potatoes are irregular and mechanized systems could not alter their cutting pattern to accommodate the unique qualities of each potato.
