Description
For two centuries herring were Lubec’s gold; smoked, canned as sardines, and kippered. Kippers are herring split in half, gutted, and cold smoked or preserved with salt and spices. A kippered “snack” may be consumed from the can without further cooking. The Peacock Canning Company was founded by Robert James Peacock (1863-1933), pictured on this label. Peacock was great-grandfather of Robert “Bob” James Peacock II who became head of the Peacock firm in Lubec in 1988.
